Ingredients

Flatbreads:
200 g / 1 cup chickpea flour
240 ml / 1 cup water
1 tbsp olive oil (15 ml / 0.5 fl oz)
½ tsp sea salt (3 g / 0.1 oz)
Hummus:
200 g / 1 cup canned chickpeas, drained and rinsed
2 tbsp tahini (30 g / 1 oz)
1 tbsp olive oil (15 ml / 0.5 fl oz)
1 clove garlic, minced (5 g / 0.2 oz)
½ lemon, juiced (25 ml / 1 fl oz)
¼ tsp smoked paprika (0.5 g / 0.02 oz)
Salt to taste
Method
Mix chickpea flour, water, olive oil, and salt to make a smooth batter. Let rest for 10 minutes.
Heat a non-stick pan over medium heat. Pour a ladle of batter and spread thin. Cook 2–3 minutes per side until golden and firm. Repeat with remaining batter.
For hummus, blend chickpeas, tahini, olive oil, garlic, lemon juice, paprika, and salt until smooth.
Serve flatbreads warm with hummus spread or in a dip platter with vegetables.
