The Science of the Snack
When goat cheese bakes, casein proteins and milk fat separate and then rebind into a porous, crispy lattice - a Maillard marvel. Goat milk’s short- and medium-chain fatty acids enhance satiety and digestibility (Haenlein, 2004). The herbs’ polyphenols add antioxidative synergy while limiting lipid oxidation during baking. This minimalist recipe exemplifies keto chemistry: fewer ingredients, maximal flavour yield.
