Ingredients

  • 250 g cauliflower florets

  • 1½ tbsp olive oil

  • 1 tbsp tahini

  • 1 tsp lemon zest + 1 tsp juice

  • ½ tsp garlic powder

  • 1 tsp sesame seeds

  • Pinch sea salt and pepper

Method

  1. Preheat oven to 200°C (400°F).

  2. Toss cauliflower with olive oil, salt, and garlic powder.

  3. Roast 20–25 minutes until golden and crisp-edged.

  4. Mix tahini, lemon juice, and zest into a drizzle.

  5. Toss warm florets with the sauce and sesame seeds before serving.
