Ingredients

250 g cauliflower florets
1½ tbsp olive oil
1 tbsp tahini
1 tsp lemon zest + 1 tsp juice
½ tsp garlic powder
1 tsp sesame seeds
Pinch sea salt and pepper
Method
Preheat oven to 200°C (400°F).
Toss cauliflower with olive oil, salt, and garlic powder.
Roast 20–25 minutes until golden and crisp-edged.
Mix tahini, lemon juice, and zest into a drizzle.
Toss warm florets with the sauce and sesame seeds before serving.
