  4. Spoon into serving bowls and chill for at least one hour.

  5. Garnish with hazelnuts and dark chocolate shavings before serving.

The Science of the Dish

This mousse is a masterclass in metabolic synergy. Cocoa provides flavanols that increase nitric oxide production, improving circulation and cognitive performance. Espresso delivers caffeine, which transiently raises ketone utilisation while sharpening mental clarity through adenosine receptor modulation. The hazelnut butter adds oleic acid, a monounsaturated fat linked to cardiovascular resilience and satiety. Meanwhile, the cream’s short-chain and medium-chain triglycerides enhance ketosis by providing readily available fuel.

In biochemical terms, this is a breakfast that wakes up your mitochondria as elegantly as it does your taste buds.
