Ingredients

  • 1 turkey breast fillet, about 1 kg / 2.2 lb

  • 200 g / 7 oz mushrooms, chopped

  • 100 g / 3.5 oz fresh spinach

  • 2 garlic cloves, minced (10 g / 0.35 oz)

  • 1 tbsp olive oil (15 ml / 0.5 fl oz)

  • 1 tsp dried thyme (2 g / 0.07 oz)

  • 1 tsp dried rosemary (2 g / 0.07 oz)

  • Salt and black pepper to taste

  • Kitchen string for tying

Method

  1. Preheat oven to 180°C / 350°F.

  2. Butterfly the turkey breast by slicing horizontally, leaving one side intact, then gently open like a book. Flatten with a meat mallet to an even thickness of 2 cm / 0.8 inch.

  3. Heat olive oil in a pan. Sauté garlic, mushrooms, and spinach for 5 minutes, until softened. Season with thyme, rosemary, salt, and pepper. Allow to cool slightly.

  4. Spread filling evenly over turkey breast. Roll carefully and secure with kitchen string.

  5. Place roulade in a roasting tray. Roast for 50–60 minutes, until internal temperature reaches 74°C / 165°F. Rest for 10 minutes before slicing.
