1 turkey breast fillet, about 1 kg / 2.2 lb
200 g / 7 oz mushrooms, chopped
100 g / 3.5 oz fresh spinach
2 garlic cloves, minced (10 g / 0.35 oz)
1 tbsp olive oil (15 ml / 0.5 fl oz)
1 tsp dried thyme (2 g / 0.07 oz)
1 tsp dried rosemary (2 g / 0.07 oz)
Salt and black pepper to taste

Method
Preheat oven to 180°C / 350°F.
Butterfly the turkey breast by slicing horizontally, leaving one side intact, then gently open like a book. Flatten with a meat mallet to an even thickness of 2 cm / 0.8 inch.
Heat olive oil in a pan. Sauté garlic, mushrooms, and spinach for 5 minutes, until softened. Season with thyme, rosemary, salt, and pepper. Allow to cool slightly.
Spread filling evenly over turkey breast. Roll carefully and secure with kitchen string.
Place roulade in a roasting tray. Roast for 50–60 minutes, until internal temperature reaches 74°C / 165°F. Rest for 10 minutes before slicing.
